Cinco de Mayo Recipes From Mexico's St. Regis Hotels

Did you know that 12.3 million cases of tequila are sold annually in the U.S. in celebration of Cinco de Mayo? Additionally, Americans are said to consume approximately 81 million avocados on the festive holiday.
Those looking to have Cinco de Mayo fun can re-create these recipes from The St. Regis Punta Mita Resort and The St. Regis Mexico City.
The St. Regis Punta Mita Resort's Famous Guacamole Recipe:
Executive Chef Gabriel Kolofon is known for his zesty guacamole, because it tells a story about Mexico's rich heritage. After completing the avocado base, the dip is finished with fresh cilantro, shredded cotija cheese and homemade pico de gallo to represent the green, white and red colors of the Mexican flag. The green color signifies hope and prosperity, white represents peace, and red symbolizes the blood of Mexican heroes.
For 10 servings, please use the recipe below:
5 avocados
1 serrano chile, chopped
100 ml lime, juiced
1/4 white onion, chopped
3 red tomatoes, diced
1 bunch of fresh cilantro, chopped
50 gr of fresh cotija cheese, shredded
Kosher salt to taste
1/4 cup of olive oil
In a clean bowl, mix the serrano chile with salt and lime juice. After 5 minutes, add the avocado and mash all the ingredients together. Rectify salt and acidity with more lime juice if is necessary and finish with olive oil. In a clean bowl, mix onion, tomato and fresh cilantro with salt and lime juice for pico de gallo.
Serve guacamole in a bowl, finishing with the pico de gallo and the shredded cotija cheese and cilantro on top, simulating the colors of the Mexican Flag, green, white and red.

1 oz. Herradura Reposado Tequila
1.5 oz. ginger syrup
.5 oz. Cointreau
Ginger salt for the Rim
1 lime wedge
Rim the glass with ginger salt and fill with ice. Pour all liquid ingredients into a mixing glass. Add large ice cubes. Shake vigorously. Strain over ice into the prepared rocks glass. Squeeze lime wedge and drop into cocktail.
